Not Always Perfect…
So my post today was supposed to be about how it was too hot to turn on my oven and cook today. Yes, it’s nearly September, but that really means nothing in Louisiana. Sometimes September temps can be the same as June and July!
In any event, I decided to write about how I was making an entire meal without using my oven. My cooking efforts tonight started off quite well. I made some Chicken Noodle Soup in the Crock Pot.
I was really excited about this because up until tonight I had never made a meal in my slow cooker. I had made appetizers like meatballs and cocktail weenies, but decided to take it up a notch. This was easy and delicious. It’s still so incredible to me that I can throw some ingredients in a pot, turn it on, forget about it, and hours later have a meal ready to go! LOL, I am a very traditional cook so I guess I always just accepted that cooking is work (not that I mind doing it). I am so glad I finally hopped on the Crock Pot train!
So, the dessert I wanted to make to go along with this no oven theme was a recipe I found in All You magazine, Lemon-Graham Icebox Cake. It looked delicious and easy enough…
Started by whisking egg yolks, lemon zest, sugar, corn starch and salt over low heat until it thickens.
Pour into a bowl, cover with plastic wrap and let chill until completely cool.
Layer the bottom of an 8 x 8 pan with graham crackers. Still with me thinking this was easy, right? Well…
was where it all fell apart. LOL! Not sure if you can tell from the photo, but the crackers are actually FLOATING in the custard mixture. Definitely NOT what was supposed to happen. When I poured the custard out onto the top of the graham cracker layer, it was soooo thin! I’m not sure why it came out that way, since I actually let it chill twice as long as I was supposed to. So, I decided not to do the final layer with the whipping cream…I’ll save that for another recipe. My awesome hubby told me to put the pudding/graham cracker concoction in the fridge and he would try to eat it anyway! Who knows, maybe after a night of chilling, it will taste great anyway…even though it is far from picture perfect.

I make these lemon bars that are yummo and decided to do them for a food day. I also thought I’d do a variation and make lime ones too, since I needed enough for a crowd. They turned out great, tasted awesome but NO one was touching them. Green, a bit slimey looking….hmm… Not too appetizing!! I could not, for the longest time, figure out why no one wanted them. xD I should have done orange and lemon instead.
lol, i am good in the kitchen, but i have cooking and baking FAILS too, like… ALL THE TIME!! LOL Bless my poor husbands heart he always tries to make the most of it too and says whatever he needs to to make me feel better about it!!
